Pork Roast - Instant Pot

Pork Roast in the Instant Pot

2 to 3 lb. pork roast (Pork shoulder, Pork butt)

2 cups broth or water, I use chicken broth for more flavor

1 onion cut into quarters.

3 garlic cloves or 1 Β½ garlic powder

2 tbsp avocado oil

Pork Rub

1 tsp of salt

1 tsp of pepper

1 tsp of garlic

Mix you pork rub spices together and rub all over your pork roast.

Add oil to the Instant Pot and select sautΓ©. When β€œHot” is displayed add your pork roast and cook on all sides for 4 minutes each side.

When done searing, press cancel to turn off the Instant Pot and remove the roast.

Add the broth or water and stir until all the bits on the bottom of the pan have been incorporated with the broth.

Add your trivet to the Instant Pot and then add the pork roast. Now add the onion and garlic. (note - you could also add carrots and potatoes.)

Put your lid on and make sure the pressure valve is on sealing.

Set you manual cooking time to 30 minutes – Allow for a 10-minute slow release before releasing the pressure. Enjoy : )
