Chicken Tortilla Soup
Chicken Tortilla Soup
Ingredients:
2 cups diced cooked chicken
1 can of black beans rinsed
1 can diced tomatoes
1 cup of whole kernel corn
1 diced onion
3 cloves of garlic
8 cups of chicken broth or bone broth
2 tbsp of chili powder
1 tbsp of cumin
2 tsp of salt
1 tsp of pepper
ΒΌ tsp of cayenne pepper
2 tbsp of avocado oil
Garnish:
Sliced jalapeno pepper
Sour Cream
Chives
Cheddar Cheese
Tortilla corn strips (you can find these already made in grocery store)
Directions:
In a large pan add the oil, the onions, salt, and pepper and cook for 2 minutes. Add the garlic and cook another 2 minutes.
Add the rest of the ingredients, except the chicken and the garnishments. Bring to a boil and cook for 15 minutes.
Add the chicken and cook for another 5 minutes. Let cool for 5 minutes. Dish into a bowl and add what garnishment you like and enjoy.
